Good Morning!
It's supposed to be a hot one today. The forecast says 93 degrees.
I opened all the windows to let in the cooler air and then I'll close them again before it warms up.
I think that will keep it cooled down some in here. My husband and I got the garden, plants, bushes and lawn all watered down early this morning (real good) so they won't suffer once the sun starts cooking. The spinach is already almost an inch and a half tall and the seeds were barely planted a week ago! Well, I found a recipe for salad dressing that I wanted to share with you.
It looks good. I think you'll like it. :
YOGURT-THOUSAND ISLAND DRESSING
(Yield: 1 cup)
1 hard-cooked egg, chopped
1 1/2 Tablespoons finely chopped black olives
1 teaspoon minced onion
1/2 cup minced celery
2/3 cup low-fat yogurt
2 Tablespoons ketchup
Combine all ingredients in a glass jar with a tight-fitting lid.
Shake to blend well, then store, covered, in the refrigerator.
