Is this where high gas prices are leading us?

Hi There!

Greetings from Denver, Colorado!
I'm glad the DNC is over!
One newspaper from New York City claimed our night life here is boring.
Good. I wouldn't want the New York city night life here.
I kind of like a little bit more calmed down life. I really like to be able to sleep quietly at night.
Don't get me wrong. We have our moments too. For those who look for it, they can find it.
I guess all I'm trying to say is: I really love it here and I guess everybody just needs to find the spot in the world that fits them best.
WELL... Today I have a recipe for you! I really like this one. Here we go:

CHICKEN ENCHILADA SOUP
"shredded chicken is simmered with masa harina, enchilada sauce and cheddar cheese in this easy soup."

Ingredients:
1 pound skinless, boneless, chicken breast halves
1 tablespoon vegetable oil
1/2 cup diced onion
1 clove garlic, minced
1 quart chicken broth
1 cup masa harina
3 cups water, divided
1 cup enchilada sauce
2 cups shredded cheddar cheese
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon ground cumin

Directions:
1.) In a large pot over medium heat, cook chicken breasts in oil until thoroughly cooked on both sides. Remove and set aside.
2.) Cook onion and garlic in remaining oil until onions are translucent. Pour in chicken broth.
In a bowl, whisk together masa harina and 2 cups of water until well blended. Pour into pot. Add remaining 1 cup of water, enchilada sauce, salt, chili powder, cumin, and cheddar cheese.
Bring to a slow boil.
3.) Shred cooked chicken and add it to the pot.
Reduce heat and simmer about 1/2 an hour, until thickened.
4.) Serve and enjoy.*

Bumper Stickers and Road Rage linked?

I think bumper stickers are a great indicator of how a person drives. Half of the time I ride my motorcycle around town, and through that experience I've learned to discriminate.
(yes, I said the 'd' word), here's how:
Obama stickers: Generally clueless people have these, they tend not to look in mirrors and just shift lanes. When they do shift lanes, they go really slow in the left lane holding up traffic.
They seem to be focused on themselves and not the world around them. Their politics reflect their driving.
Abortion supporters: Tend to be women that are glued to a cell phone or having a high intensity conversation with other passengers. They are the ones that don't stop fully when making right hand turns and just change lanes without indicating; a very selfish driver.
Anti-war stickers: These drivers are so nice that they don't use their right of way and are super apologetic. They are overly cautious and often let other drivers take advantage of them. Those are the ones that I just cut off and generally ignore. Not only because I've served two tours in Iraq and I have a general dislike for wussies, but primarily I know if I do anything to them, they won't do anything to me; they are spineless.
Honorably Discharged Veteran license plates: They're just like me so I grant them full courtesy.
(unless they're Iraq Vets for Peace... those guys just stink and they don't deserve to be treated with respect or any other well regard).
College Alumni stickers: They tend to be safer drivers and and look before they turn.
High school stickers: Watch out. No blinker, no brakes, not ever paying attention; I don't ever ride in front of them (that's from being rear-ended once by one) or in a position to where I have to react and they block my exit.
Animal Rights stickers: Irrational drivers all around.
Republican stickers: They tend to drive a bit faster than traffic but generally follow the rules; I don't worry about them too much.
Pro-gun stickers: Good drivers, I don't worry about being car/bike jacked when they're around; tend to be good drivers too.
So there it is; Because of what I see I adjust my driving/riding accordingly around those people.*

GOOD SABBATH!

THE HOUSE BEHIND THE WEEDS

Just two little boys walking down a dusty lane.
They came upon this old white house with broken window panes.
The paint was faded, the shine was gone, the grass had grown so high.
Still they moved their little feet, to see what was inside.
They opened up the squeaky door and then it came to light.
This must have been an old church house, once upon a time.
Dirty, dusty, wooden pews, a pulpit that still stood.
A Bible laid upon it, though the pages weren't too good.
An offering plate, and song books too, were lying on the floor.
They must have left this old church fast, the day they closed these doors.
And over in the corner, a piano was still there.
It must have played a pretty tune, but I guess nobody cared.
So little Bill looked up at Tommy, and Tommy looked at Bill.
"Why don't we clean this old church up and get these old pews filled?"
They took a rag and wiped the dust to try and make things shine.
And then they took the offering plate, and put in their Last dime.
They took a broom and swept the floor, and picked up broken glass.
They got it all so nice and neat, and then they mowed the grass.
They lifted up the old church sign, and stood it by a tree.
Right down by that old dirt road, where everyone could see.
They ran back home, to find Daddy gone, but Mama was inside.
Just to find her hurt again, where Daddy had made her cry.
"Don't cry Mama, wipe those tears," Little Bill And Tommy smiled.
"Cause we have a big surprise for you, just down the road a mile."
Hand in hand they tugged at her, until they made her run.
"What is it Bill, Oh Tommy, just what have you two kids done?"
And then they came upon the house, once hidden by the weeds,
And there it stood, a country church, just like it used to be.
"But what is it, Mother? What's with your tears?
We thought this would bring you joy."
"Yes, but hush kids now and listen close, my two sweet precious boys."
They both got quiet and stood real still, for the words they heard so true
was Daddy praying in the church, with his head bowed on the pew.
"Forgive me Lord! Forgive me Lord! Though I'm not worthy of Your love.
Shine down on this sinner man, Sweet Salvation from above."
"For I've been out in the world, You know, living my life all wrong.
Until I came upon this church; the place where I belong."
"I never noticed it before. All those times I passed it up.
I guess I wasn't looking, Lord. Or maybe I was drunk."
"Bless O Lord, yes, Bless O Lord, the one who made me see
this little church that used to hide, behind all those tall weeds."
And then he raised his head and stood, with his hands high in the air
To find two, dirty, tear-faced boys, with Momma standing there.
They ran up to him, hugged him tight, as their tears fell on the floor.
"Don't worry kids, I'm not the Dad, the one you've known before."
"Things are different for us now, so keep on those pretty smiles
and let's go gather people in, to walk down these church aisles."
Then Bill looked at Tommy, and Tommy looked at Bill.
"Come on brother, let's get to work, to get these old pews filled."
"For we need no special blessing, for cleaning up this church
cause, God gave us back our Daddy, and that's more than gold is worth."
Sabbath morning, pews all filled, and smiles on every face;
Especially two little country boys, the ones who found this place.
Though it was hid back in the weeds, and so far out of sight,
nothing is ever hard to find, if you're walking toward God's light.*

Sometimes people do some 'not so smart' stuff.
I thought I'd show you some not so smart stuff.* (please never copy their actions!)

Happy August Everybody!!

Here where I live in Colorado, we just finished beating a 1901 record of 18 consecutive days of 90 something degree weather. 18 days was the old record, yesterday was our 23rd day. I'm so glad that's over. They had said the most it had reached today was 83 degrees at DIA International Airport. I really wanted to do more outside each day, plant more flowers, spend more time out there with the ones I have, get the fountain running; but I just can't be in the heat. It gets too much for me to handle. I wanted to have more barbecue dinners outside, but that's alright, I just have to be more creative inside the kitchen. Well, I found this recipe for you, it's a take on the old fashioned BLT, very simple, uses different bread though.

GROOVY BLT (when was the last time you had a good BLT?)

1/4 cup Mayonnaise
4 Baguette Rolls -6 inches each- split, toasted.
4 large Lettuce leaves
8 slices Tomato
12 whole slices Bacon, crisply cooked, drained

Spread Mayonnaise onto Baguettes.
Fill with Lettuce, Tomatoes and Bacon.* -Makes 4-

If it's a hot day you could eat these with chips and dip.
If it's a cold day you could eat these with Tomato Soup.
I guess you could make variations of this recipe. You could substitute Pepperoni instead of Bacon. I bet that would be good too.*
